Ingredients

¾ cup yellow cornmeal 

+

½ cup all-purpose flour 

+

¼ cup white granulated sugar 

+

1½ teaspoons baking powder 

+

½ teaspoon kosher salt 

+

¼ teaspoon cinnamon 

+

¼ teaspoon nutmeg 

+

8 ounces sweet potato, mashed

8-inch cake pan 

+

1 large egg 

+

⅓ cup milk 

+

¼ cup sour cream 

+

1 can sweet corn, drained 

+

1 tablespoon vegetable oil 

+

1 tablespoon unsalted butter, for pan 

+

1 tablespoon cornmeal, for dusting the pan 

+

Butter, warmed, for serving (optional)

Directions

STEP 1

Combine the cornmeal, flour, sugar, baking powder, salt, cinnamon, and nutmeg in a medium bowl, then set aside. 

STEP 2

Whisk the sweet potato, egg, milk, sour cream, sweet corn and vegetable oil together in a separate large bowl until smooth. 

STEP 3

Add the dry mixture to the wet mixture and mix just until combined. 

STEP 4

Grease an 8-inch cake pan with butter and dust with cornmeal. Tap the pan to spread the cornmeal evenly across the bottom. 

STEP 5

Cover the cake pan with aluminum foil. 

STEP 6

Select the Preheat function on the Cosori Smart Air Fryer Toaster Oven, adjust temperature to 400°F, and press Start/Pause.   

STEP 7

Insert the cake pan at mid position in the preheated oven. 

STEP 8

Select the Bake function, adjust temperature to 400°F and time to 35 minutes, press Shake, then press Start/Pause.   

STEP 9

Remove the aluminum foil cover halfway through cooking. The Shake Reminder will let you know when.

STEP 10

Remove the cornbread when done and let cool for 5 minutes, then remove the cornbread from the pan and set on a wire rack to cool completely.  

STEP 11

Slice into 9 pieces and serve at room temperature or warmed with butter, if desired.
