Instructions

CANDIED BACON: 

  1. Remove the crisper plate from the air fryer basket and place the bacon directly into the basket.
  2. Sprinkle brown sugar and black pepper over the bacon strips.
  3. Select the Bake function, adjust temperature to 375°F and time to 22 minutes, then tap Start/Pause.
  4. Flip bacon halfway through cooking.
  5. Remove when done and set bacon on the cooling rack.

MAKING THE SALAD: 

  1. Whisk together all the ingredients for the vinaigrette until fully emulsified. Season to taste.
  2. Cut up the candied bacon with kitchen shears.
  3. Slice the Brussels sprouts thinly with a mandoline or a sharp knife. Wash and drain thoroughly.
  4. Add the Brussels sprouts and candied bacon into a bowl, along with the apples and walnuts, if desired. Dress with half the vinaigrette.
  5. Plate the salad, then garnish with grated Manchego and chives. Serve with extra dressing on the side.

Chef Notes: Dress the Brussels sprouts ahead of time to soften them and add more flavor.
