Mini Air Fryer Bacon, Lettuce & Tomato Sandwiches

How to Pick Bacon:

  • Color: When buying bacon, look for slices with long veins of lean pink meat and a relatively small amount of fat. If the meat looks gray, green, moldy, or otherwise discolored, do yourself a favor and avoid it!  
  • Odor: If it passes the color test, pick up the package and smell it. No smell or a smoky scent is a good sign. A sour or otherwise funky odor means the meat has likely spoiled. If the bacon has an expiration date, purchase it before it expires, and refrigerate it at 40°F / 4.4°C or below.

Step by Step

Let's cook

PREPPING THE SANDWICH

  1. Place the crisper plate into the COSORI Air Fryer basket. 
  2. Place the bacon slices onto the crisper plate, doing your best not to overlap them. 
  3. Select the Air Fry function, adjust temperature to 365°F and time to 10 minutes, then tap Start/Pause
  4. Flip the bacon over halfway through cooking. 
  5. Remove the bacon when golden brown and crispy to your liking, then place onto a paper towel-lined plate to catch any excess drippings. 
  6. Place the bread slices onto the crisper plate. 

COOKING & ASSEMBLING THE SANDWICH

  1. Select the Bake function, adjust temperature to 400°F and time to 3 minutes, then tap Start/Pause
  2. Remove the bread when lightly golden and toasted to your liking.  
  3. Lay the bread on a work surface and spread ½ tablespoon of mayonnaise onto each slice. Place the butter lettuce leaves onto each slice of bread, then place tomato slices on top of 2 slices of bread and sprinkle with flaky sea salt and black pepper. Break the bacon slices in half and layer them on top of the tomato slices.  
  4. Close the sandwiches and cut them each into fours. Insert a toothpick into each ¼ to hold it in place. Serve immediately.
