The Meal Prepper's Secret Recipe

This chicken salad recipe is a meal prepping no-brainer because there are multiple ways to eat it. For example, you can turn it into a sandwich with your bread of choice or serve it on top of saltines for a filling snack. You can even add it to a salad for a lighter option. The possibilities are endless.

Ingredient Swaps

If you don’t like the texture of apples in your salad, you can also opt to use green or red grapes. If you would like to make this nut-free, you can add any toasted seeds like sunflower or pepitas. 

Finding the Best Apples

Gala apples are our top choice for this salad, but any crisp and tart apple will do.

Instructions

PREPPING THE CHICKEN SALAD

  1. Rub olive oil on the chicken breasts and season with 1 teaspoon kosher salt and ½ teaspoon ground black pepper. 
  2. Place the crisper plate into the COSORI Air Fryer basket. 
  3. Select the Preheat function, adjust temperature to 380°F, then tap Start/Pause
  4. Place the chicken onto the preheated crisper plate. 
  5. Select the Roast function, adjust temperature to 380°F and time to 20 minutes, then tap Start/Pause. 
  6. Remove the chicken when done and set aside to fully cool for about 20 minutes, then dice into ¼-inch-thick pieces. 
  7. Stir together the lemon juice, lemon zest, mayonnaise, Greek yogurt, ½ teaspoon kosher salt, ½ teaspoon black pepper, dill, chives, tarragon, parsley, garlic powder, and Dijon mustard until well combined. 
  8. Toss the chopped chicken, celery, scallions, apples, and walnuts in the mayonnaise mixture until well coated. 
  9. Serve cold with desired sides. 

Chef Notes: It’s best to cool down the chicken breast as best as possible so that when you mix it with the rest of the ingredients, it won’t cause any spoilage.
