Ingredient Swaps

Pork Chop: Swap pork chops with chicken breast or thighs and cook until the internal temperature reaches 165°F.

Ketchup: Swap ketchup with a low-sugar/zero-sugar ketchup.

Honey: Swap honey with monk fruit sweetener if keeping your sugar content low. 

How to Pick Pork

Color: Look for pork that’s firm with a grayish-pink color and small amount of fat on the outside.

Marbling: A small amount of marbling will give you better flavor and tenderness.

Date: Remember to grab your pork just before checking out at the supermarket so it stays fresh for longer.

Instructions

PREPPING THE PORK CHOPS

  1. Heat a medium saucepan over medium-high heat to begin making the barbecue sauce. Add the olive oil, then add the onion and garlic. Sauté for 5 minutes or until softened, then add the remaining ingredients and stir to combine. Simmer the sauce on low heat for 20 minutes, stirring occasionally to prevent the bottom from burning.  
  2. Transfer the sauce to a blender, food processor, or immersion blender and blend until smooth. Taste and adjust seasoning if needed.  
  3. Place the crisper plate into the COSORI Air Fryer basket. 
  4. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause
  5. Combine the salt, pepper, garlic powder, smoked paprika, and chili powder in a small bowl. 
  6. Brush the olive oil on both sides of the pork chops, then season both sides with the spice mixture. 
  7. Place the pork chops onto the preheated crisper plate. 

COOKING THE PORK CHOPS

  1. Select the Broil function, adjust time to 8 minutes, then tap Start/Pause.  
  2. Remove the air fryer basket after 4 minutes of cooking and brush the barbecue sauce over the tops of the pork chops. Return the basket to the air fryer. 
  3. Flip the pork chops over when 2 minutes of cooking remain and brush with more barbecue sauce. 
  4. Remove the pork chops when done, allow to rest for 5 minutes, then serve with more barbecue sauce if desired. 

Chef Notes: Use one chipotle pepper in the adobo sauce if you don’t like your barbecue sauce too spicy. The barbecue sauce can be made up to one week in advance and stored in the refrigerator. You can easily double the recipe if you’re feeding a larger family. This barbecue sauce also goes really well with any cut of chicken.
