How to Pick Beans

Cannellini beans are used for this recipe but if you cannot find them, any white bean will work.  

Ingredient Swaps

You can also use black beans, but this will alter the taste and color.

Nutritional Information

Potassium is an essential electrolyte for overall health, and this dip is packed with it! Just half a cup of cannellini beans combined with a whole avocado (without the skin or pit) provides nearly 1,000 mg of potassium. This vital nutrient supports digestion by aiding in the release of saliva and gastric acids, as well as assisting in the digestion and absorption of proteins and carbohydrates.

Instructions

CHARRING GREEN ONIONS

  1. Toss the green onions with avocado oil, salt, and pepper. 
  2. Place the crisper plate into the air fryer basket.  
  3. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause
  4. Place the green onions onto the preheated crisper plate. 
  5. Select the Broil function at 450°F and 5 minutes, then tap Start/Pause
  6. Flip halfway through cooking. 
  7. Remove the green onions when done and roughly chop. 

MAKING THE DIP

  1. Place the beans into the food processor and blend until smooth.  
  2. Add the remaining ingredients and blend until well combined. 
  3. Season with salt and pepper to taste, then transfer to a bowl or container.  
  4. Refrigerate for a minimum of 30 minutes or until well chilled. 
  5. Serve with pita chips, veggies, or crostini. 

Chef Notes: Try making this bean dip ahead of time—letting it sit overnight will help the dip develop deeper flavors.
