Instructions

  1. Mix the ingredients for the succotash into a medium bowl until well combined. 
  2. Place crisper plate into the air fryer basket. 
  3. Select the Air Fry function, adjust temperature to 450°F and time to 6 minutes, then tap Start/Pause to preheat.  
  4. Place the corn cobs onto the preheated crisper plate. 
  5. Select the Air Fry function, adjust temperature to 400°F and time to 14 minutes, then tap Start/Pause.  
  6. Flip corn cobs halfway through cooking. 
  7. Remove corn cobs when done and set aside. 
  8. Carefully remove the crisper plate. 
  9. Add succotash mixture into the air fryer basket. 
  10. Select the Air Fry function, adjust temperature to 450°F and time to 15 minutes, then tap Start/Pause.  
  11. Stir the succotash halfway through cooking. 
  12. Remove when done. 
  13. Place corn flat side down and slice down the sides of the corn to remove the kernels.  
  14. Add the cobs into the large sauce pot with vegetable stock. Heat on medium and boil for 10 minutes. Then turn off heat.  
  15. Remove the cob, add in the corn, and let steep for 15 minutes. 
  16. Add soy milk, garlic powder, salt, and pepper. Blend until smooth with the immersion blender. 
  17. Pour soup into a mesh strainer and use a wooden spoon to strain the corn pulp into a large bowl or another pot. 
  18. Reheat pot on low heat until edges start to simmer.  
  19. Assemble by ladling mixture into a bowl, topping with succotash, parsley, and scallions. 

Chef Notes: This soup can also be served chilled. Make sure to season it with a bit more salt before refrigerating the soup. The cold tends to dull down flavors.
