How to Pick Eggplants

Pick smaller globe eggplants if possible. You can also use Japanese eggplants.

Ingredient Swaps

Any kind of tomatoes like grape or even diced beefsteak tomatoes will also work.

Instructions

PREP THE EGGPLANT: 

  1. Cut the eggplant in half and scoop out the center, leaving about a ¼-inch of eggplant flesh on the inside. Save the removed eggplant flesh and chop into small pieces. 
  2. Brush eggplant halves with extra-virgin olive oil generously all over, then season with salt and pepper. 
  3. Place the crisper plate into the air fryer basket. 
  4. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause.  
  5. Place 2 eggplant halves cut side up onto the preheated crisper plate.
  6. Select the Roast function at 425°F, adjust time to 12 minutes, then tap Start/Pause.
  7. Remove when done and set aside. Repeat with remaining eggplant halves.

COOK THE FILLING: 

  1. Heat the saucepan with 2 tablespoons of extra-virgin olive oil on medium heat, then add the garlic and onion. Cook until the onions soften, then stir in the tomato paste. 
  2. Add the cherry tomatoes and the chopped eggplant flesh. Cook until eggplant is tender.
  3. Season with cumin, oregano, and ½ teaspoon kosher salt, then remove from heat.
  4. Fill the eggplant halves with the mixture and top with feta cheese. Place onto the crisper plate.
  5. Select the Broil function at 450°F, adjust time to 5 minutes, then tap Start/Pause.
  6. Remove when done. Garnish with parsley and a drizzle of tahini, if desired. Repeat with remaining eggplant halves, then serve.

Chef Notes: Leftovers can be stored in an airtight container for up to 2 days.
