Instructions

COOKING THE CHICKEN AND BROCCOLI: 

  1. Place the crisper plate into the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 385°F, then tap Start/Pause
  3. Season the broccoli florets and chicken breast separately with olive oil spray and a sprinkle of salt and pepper.  
  4. Place the chicken breast onto the preheated crisper plate. 
  5. Select the Air Fry function at 385°F, adjust time to 20 minutes, then tap Start/Pause. Flip chicken breast over halfway through cooking. 
  6. Add the broccoli florets around the chicken when 5 minutes of cooking remains. 
  7. Remove the chicken and broccoli when fully cooked and golden brown. Allow the chicken to rest for 10 minutes before dicing into pieces. Wipe the air fryer basket clean. 

MAKING THE SAUCE: 

  1. Place a medium saucepan on the stove on medium-high heat. Add the butter, then once melted add the mushrooms.  
  2. Sauté for 3 to 5 minutes, stirring occasionally, or until the mushrooms have released their liquid and are starting to brown. Add the onions, garlic, thyme, and the remaining salt and pepper, then cook for 5 more minutes, or until golden.                                         
  3. Sprinkle in the flour and stir until combined. Cook for 1 to 2 minutes to cook out the raw floury taste. Slowly add the chicken stock and whisk until the mixture is smooth. Add the milk and Dijon mustard and whisk until combined.  
  4. Bring mixture to a simmer, then remove from heat and stir in the mozzarella cheese. Taste and add more salt and pepper if needed. 

ASSEMBLE THE CASSEROLE: 

  1. Remove the crisper plate from the air fryer basket. 
  2. Place the cooked pasta, diced chicken, broccoli, and sauce in the bottom of the basket and stir to combine. 
  3. Mix the Parmesan cheese, panko breadcrumbs, and parsley in a small bowl, then sprinkle evenly over the casserole. Spray the top lightly with olive oil spray. 

COOK THE CASSEROLE: 

  1. Select the Broil function at 450°F for 5 minutes, then tap Start/Pause
  2. Remove the casserole when the top is golden brown.  
  3. Serve the casserole while still warm. 

Chef Notes: You can cook the pasta, chicken, and broccoli ahead of time for a quick assembly. Don’t skip on the panko Parmesan topping as that adds a nice crunch to the casserole.
