French or Old Style Mustard contains rehydrated mustard seeds. You can use whole grain mustard if you cannot find the Old Style mustard.

If romaine hearts are not available, you can substitute it with either green leaf lettuce or even regular romaine lettuce.

Instructions

  1. Coat chicken breast with extra-virgin olive oil. 
  2. Stir together granulated garlic, cayenne pepper, black pepper, and salt. 
  3. Season both sides of chicken breast with the seasoning blend. Cover with plastic wrap and chill in the refrigerator for up to 1 hour. 
  4. Remove chicken breast from refrigerator 10 minutes before cooking. 
  5. Place the crisper plate into the air fryer basket.  
  6. Select the Air Fry function, adjust temperature to 230°C and time to 4 minutes, then tap Start/Pause to preheat.  
  7. Place chicken breast onto the preheated crisper plate.   
  8. Select the Roast function, adjust temperature to 190°C and time to 17 minutes, then tap Start/Pause.  
  9. Remove when done and allow to fully cool before dicing into small cubes. 
  10. Place romaine, peas, apples, celery, cucumber, pepitas, scallions and chopped chicken into a large bowl. 
  11. Whisk the ingredients for the vinaigrette then toss into the bowl. Mix well then serve. 

Chef Notes: You can assemble the salad ahead of time and keep the vinaigrette separate. Toss in vinaigrette right before serving
