This thoughtful dish uses every part of the carrot to craft something truly special. Sweet roasted carrots pair with crisp carrot-top frittelles, silky ginger-lime puree, and a gently spiced curried crema for a celebration of everyone’s favorite root vegetable.

Curried Crema

Ginger Lime Carrot Puree

Instructions

Curried Crema 

  1. Mix all ingredients for curried crema together until smooth and refrigerate while you prepare the rest of the recipe. 

Ginger Lime Carrot Puree 

  1. Boil carrots, vegetable stock, and salt in a saucepan for 6 minutes or until carrots are soft enough to be pierced with a fork. 
  2. Blend all ingredients with lime juice, ginger, and cayenne until smooth. 
  3. Place into a piping bag or food-safe plastic bag and set aside for plating. 

Roasted Carrots 

  1. Place carrots into a small oven-safe dish with herbs, salt, and butter. 
  2. Place small oven-safe dish onto the air fryer crisper plate.  
  3. Select the Air Fry function at 10 minutes, adjust temperature to 300°F, then tap Start/Pause.  
  4. Flip halfway through for even cooking and coating with honey. 
  5. Remove oven-safe dish with carrots and remove carrots for plating. 

Fritelles 

  1. Remove crisper plate from air fryer basket. 
  2. Select the Air Fry function, adjust temperature to 350°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Mix all ingredients and form into 2 inch patties, ¼ inch thick. 
  4. Place the patties directly into the preheated basket.  
  5. Select the Air Fry function, adjust time at 350°F and time to 8 minutes, then tap Start/Pause.  
  6. Flip halfway through for even cooking. 
  7. Remove fritelles and place aside.  

Plating 

  1. Plate all ingredients by placing puree as a base, with roasted carrots on top.  
  2. Place fritelles on the side overlapping some of the puree. 
  3. Spoon over some crema, garnish with carrot sprigs, and serve immediately. 

Prep crema ahead of time to allow the curry to bloom and bring out more color 

Make fritelles ahead of time and place into fridge until ready to cook
