Ask for fresh or previously frozen fillets, and they will weigh, wrap, and label it for you.

Instructions

Prepare the Salmon & Green Beans 

  1. Add the couscous to a medium bowl. Add the boiling water and cover with a plate or plastic wrap to steam for 5 minutes, or until the couscous fully absorbs the liquid. Fluff couscous with a fork, then toss with 2 tablespoons olive oil. 
  2. Stir the garlic, 1 tablespoon Dijon, lemon zest, ¼ teaspoon salt, and ¼ teaspoon pepper in a small bowl, then brush over the salmon fillets. Place a handful of couscous over each salmon fillet, pressing to adhere and form a crust. Drizzle or spray the tops lightly with olive oil.  
  3. Toss the green beans with 1 tablespoon olive oil, ¼ teaspoon salt, and ⅛ teaspoon pepper. 

Cook the Salmon 

  1. Insert the crisper plate into the air fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Place the salmon onto the preheated crisper plate. 
  4. Select the Air Fry function at 10 minutes and adjust the temperature to 360°F, then tap Start/Pause
  5. Remove salmon when the couscous turns lightly golden and crisp, and the salmon is just cooked through. Allow the salmon to rest while you cook the green beans. 

Cook the Green Beans 

  1. Place the green beans onto the crisper plate. 
  2. Select the Air Fry function, adjust the temperature to 400°F and time to 7 minutes, then tap Start/Pause
  3. Remove green beans when golden brown and crispy. 

Make the Tomato Olive Topping 

  1. Whisk the white wine vinegar, 1 teaspoon Dijon, ¼ teaspoon salt, and ¼ teaspoon pepper in a small bowl. Drizzle in the olive oil until emulsified.  
  2. Add the olives, tomatoes, and parsley. Adjust seasoning to taste. 
  3. Serve salmon and green beans on serving plates and top with tomato olive mixture, then serve. 

You can make the couscous topping 24 hours in advance. The salmon is best served hot to maintain the crispness of the couscous topping.
