Chicken Provencal Recipe | Easy Air Fryer French Dinner

Herbes de Provence is typically a blend of thyme, rosemary, oregano, and lavender and contains antioxidant compounds that enhance flavor without added sodium.

Step by Step

Let's cook

Brown the chicken: 

  1. Drizzle the chicken thighs with olive oil. Stir together the Herbes de provence, salt, and pepper in a small bowl, then rub all over the chicken, even under the skin.  
  2. Insert the crisper plate into the COSORI Air Fryer basket. 
  3. Select the Air Fry function, adjust the temperature to 400F and time to 4 minutes, then tap Start/Pause to preheat. 
  4. Place the chicken thighs onto the preheated crisper plate. 
  5. Select the Air Fry function, adjust the temperature to 400F and time to 12 minutes, then tap Start/Pause
  6. Remove chicken when the skin is golden brown and crispy. It doesn’t need to be fully cooked as it will finish cooking in the sauce. 

Make the sauce: 

  1. Heat a medium to large pan over medium high heat. Add the olive oil, then add the shallot, garlic, salt and pepper. Cook for 3-5 minutes, or until beginning to brown. Add the white wine and cook for 2 minutes. Add the tomatoes, olives, capers, tarragon, thyme sprig, and orange zest. Nestle in the chicken thighs skin-side-up.  

Cook & Serve: 

  1. Simmer on medium low heat, uncovered, for 12 minutes, or until the sauce has thickened and the chicken is fully cooked.  
  2. Remove chicken from heat and top with fresh parsley. 
  3. Serve with toasted baguette, rice, roasted potatoes, or a simple fresh salad.
