This method creates a perfectly smooth and glossy candy coating without the guesswork. Instructions

1. Select the Saute function on the pressure cooker and adjust the temperature setting to high and time to 30 minutes, then press Start.
2. Wash and thoroughly dry the apples, then insert the lollipop or popsicle sticks so they are firmly positioned in the apples. Place the apples on a cookie sheet lined with wax paper that has been coated with oil spray.
3. Attach a candy thermometer into the inner pot. Place the sugar, corn syrup, and water into the inner pot. Allow mixture to come to a boil, then cook until it reaches 300°F, which is the hard crack stage. This process will take 15 to 20 minutes. You do not need to stir the pot.
4. Press Cancel to stop cooking, then carefully stir in the red food coloring. You may need to add more depending on the quality and strength to get it to a deep red color.
5. Cool mixture for 5 to 10 minutes to allow the bubbles to subside so you don’t have bubbles in your candy coating.
6. Dip each apple carefully into the candy mixture, swirling to coat them thoroughly and allowing any excess to drip back into the pot.
7. Transfer the coated apples onto the prepared cookie sheet and allow them to cool until the candy has fully hardened, then serve.

Chef Notes: If the candy coating sits for too long and starts to harden, simply select the Saute function again to get it soft. You can also re-boil the sugar in the pot and then dump it in the sink with hot water for easy clean-up!
