Instructions

  1. Remove the crisper plate from the air fryer basket.  
  2. Select the Air Fry function, adjust temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Place the avocado oil, garlic, ginger, chili pepper, and onion directly into the preheated basket and stir to combine.  
  4. Select the Air Fry function, adjust temperature to 400°F and time to 5 minutes, then tap Start/Pause.  
  5. Add the cauliflower, bell pepper, coriander, garam masala, cumin, smoked paprika, turmeric, salt, and pepper to the basket. Stir to combine. 
  6. Select the Air Fry function, adjust temperature to 400°F and time to 6 minutes, then tap Start/Pause.  
  7. Add the chickpeas, coconut milk, tomato purée, and water. Stir to combine.  
  8. Select the Air Fry function, adjust temperature to 400°F and time to 15 minutes, tap Shake, then tap Start/Pause.  
  9. Stir curry halfway through cooking. The Shake Function will let you know when. 
  10. Remove curry when slightly thickened and the vegetables are tender. Taste and adjust seasoning if needed. 
  11. Ladle curry over cooked quinoa and garnish with fresh cilantro and lime, then serve.
