Cheesy Garlic Butter Filling

Instructions

Making the Dough 

  1. Add 3½ cups of all-purpose flour, yeast, and salt into the bowl of the mixer. Mix on low to combine. 
  2. Heat milk, ⅓ cup unsalted butter, and sugar in a microwave-safe bowl for 1 minute or until milk feels warm to the touch. Stir to dissolve the sugar and butter. 
  3. Add the egg into the dough and set mixer on low. 
  4. Pour the milk mixture slowly into the mixing bowl with the mixer still on. 
  5. Set mixer on medium speed and knead dough until it becomes smooth and pulls away cleanly from the bowl. 
  6. Coat a large bowl lightly with oil spray and place dough into the bowl. Lightly spritz the top with oil spray and cover bowl with plastic wrap.  
  7. Place dough in a warm area and let proof for 1 hour. 

Shaping 

  1. Turn the dough out onto a floured surface and roll into a 10 x 18-inch rectangle. 
  2. Mix the minced garlic, 1 cup unsalted butter, parsley, chives, kosher salt, and garlic powder. Set aside 3 tablespoons of the garlic butter. 
  3. Spread the rest of the garlic butter onto the dough, leaving ½ inch at the top bare. 
  4. Sprinkle the mozzarella and half of the Parmesan cheese atop the buttered surface and gently press down. 
  5. Roll the dough up tightly into a log, starting from the bottom. Stretch the top over the roll and pinch to seal. 
  6. Divide the log into 12 portions by pressing the knife gently into the log to mark them. Slice in one stroke as you cut the portions. 

Baking 

  1. Remove the crisper plate from the air fryer basket, then coat the basket with oil spray and place the rolls into the basket. 
  2. Cover entire basket in plastic wrap and let the dough proof for 30 minutes to 1 hour. 
  3. Remove all the plastic wrap and place basket into the air fryer
  4. Select the Bake function, adjust temperature to 325°F and time to 24 minutes, then tap Start/Pause
  5. Remove when done, then brush the garlic butter on top and top with remaining grated Parmesan cheese. Serve warm. 

Chef Notes: Placing the dough in a warm spot—even in an oven with the heat off—will help with the proofing process.
