How To Pick Hanger Steak

Pick a hanger steak with deep red color, significant fat marbling, and a relatively uniform thickness for even cooking. Look for a “butcher's cut” with minimal, soft fat, and ensure the tough central sinew is removed or can be easily trimmed.

Instructions

Make the Cowboy Butter 

  1. Mix all the cowboy butter ingredients together in a medium bowl until well combined and smooth.  
  2. Store cowboy butter at room temperature while you make the salad and cook the steak. 

Cook the Broccoli  

  1. Insert the crisper plate into the air fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 400°F and time to 5 minutes, then tap Start/Pause to preheat. 
  3. Toss the broccoli florets in olive oil and season with salt and pepper. Place broccoli onto the crisper plate. 
  4. Select the Air Fry function, adjust the temperature to 400°F and time to 8 minutes, then tap Start/Pause
  5. Remove broccoli when crisp-tender and golden-brown. 

Make the Dressing & Breadcrumbs 

  1. Place the butter in a small pan over medium heat. Once melted, add the panko breadcrumbs, and stir to combine. Cook for 3 to 5 minutes, stirring often, or until the breadcrumbs are golden-brown and toasted. Set aside. 
  2. Place the anchovy fillets, grated Parmesan, mayonnaise, lemon juice, Dijon mustard, garlic, and Worcestershire sauce in a mini food processor or bowl if using an immersion blender. Blend until smooth and creamy. Taste and adjust dressing if needed. 
  3. Toss broccoli florets in half of the dressing (or as much as you prefer), then arrange on a serving plate. Sprinkle with the toasted breadcrumbs. 

Cook the Steak 

  1. Select the Air Fry function, adjust the temperature to 450°F and time to 10 minutes, then tap Start/Pause to preheat. 
  2. Dry the steak well with paper towels, then drizzle with olive oil and season both sides with salt and pepper. 
  3. Place the hanger steaks onto the preheated crisper plate. 
  4. Select the Air Fry function, adjust the temperature to 450°F and time to 8 minutes, then tap Start/Pause
  5. Remove steaks when they reach an internal temperature of 125°F for medium-rare. The total cook time will depend on the size of your steaks. Brush steaks with some of the cowboy butter and allow to rest for 5 minutes. 
  6. Slice the steak against the grain and brush with more cowboy butter if desired. Serve alongside broccoli Caesar salad. 

Chef Notes: The cowboy butter, breadcrumbs, and dressing for the Caesar salad can all be made in advance. Hanger steaks can vary in size, so to ensure it is cooked to your desired preference, you can check with a meat thermometer.
