Instructions

Granola Clusters 

  1. Place the crisper plate into the air fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 320°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Place all the pumpkin seed cluster ingredients into a medium bowl and stir until the maple syrup coats all the ingredients. 
  4. Line the preheated crisper plate with parchment paper, then spread the mixture into a thin, even layer over the parchment paper. 
  5. Select the Bake function, adjust the temperature to 300°F and time to 12 minutes, then tap Start/Pause
  6. Remove granola when golden brown and allow to set for 15 minutes to solidify. After it has cooled, carefully break into clusters. 

Roasted Berries 

  1. Remove the crisper plate from the air fryer basket. 
  2. Place the strawberries, raspberries, blueberries, and blackberries into the air fryer basket. Add vanilla seeds and sugar and stir to combine. 
  3. Select the Roast function, adjust the temperature to 350°F and time to 8 minutes, then tap Start/Pause
  4. Remove berries when golden and soft.  

Assemble 

  1. Assemble bowls by placing ½ cup yogurt into each bowl. Top with ¼ cup roasted berries and 1 to 2 granola clusters. Garnish with fresh mint, then serve.
