Ingredient Swaps

Pasta: Instead of high-protein pasta, you can also use whole wheat, legume, or heart of palm pasta for similar nutritional value.

How to Pick Pasta:

Healthier Alternative: Look for pasta labeled high-protein, or types of pasta made from high-protein ingredients such as chickpeas.

Instructions

PREPPING THE CHEESE & PASTA

  1. Place all of the cheese sauce ingredients into the blender and blend on high until everything is well incorporated.  
  2. Place a medium pot onto the stove on medium heat. 
  3. Pour the cheese sauce into the pot and stir until it slightly thickens. 
  4. Add in the cooked pasta and stir to coat. 
  5. Transfer the pasta into an 8 x 8-inch square pan, then top with ¼ cup grated Parmesan cheese. 
  6. Place the crisper plate into the COSORI air fryer basket, then place the square pan onto the crisper plate. 

COOKING THE PASTA & PREPPING THE SALAD

  1. Select the Broil function, adjust temperature to 425°F and time to 5 minutes, then tap Start/Pause. 
  2. Remove the pasta when done and set aside. 
  3. Whisk together all of the ingredients for the balsamic vinaigrette until well combined. 
  4. Add the baby spring mix into a large bowl, top with tomatoes, cucumbers, feta cheese, and balsamic vinaigrette, and toss to coat. Serve alongside the high-protein mac and cheese.

We recommend following the instructions for “al dente" pasta that is listed on the pasta’s packaging. If there are no instructions for al dente pasta, reduce the cooking time by 2 minutes.
