This herb-crusted rack of lamb layers fresh basil, parmesan, and crisp panko with a subtle tang of Dijon. Creamy fondant potatoes and honey-glazed carrots complete the plate with a red wine sauce.

Ingredient Swaps: 

  • Swap butter with margerine 
  • Swap parmesan with pine nuts instead for a nuttier flavor

Ingredients Needed

Rack of Lamb

Fondant Potatoes

Roasted Carrots

Lamb Sauce

Instructions

Rack of Lamb 

  1. Blend panko, basil, parmesan cheese with a food processor until a green panko crumb is visible. Place into refrigerator or aside. 
  2. Season the rack of lamb with salt 
  3. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause. 
  4. Place rack of lamb into the airfryer with bone side down, with the crisper plate, and air fry at 450°F for 7 minutes 
  5. Remove rack of lamb once done cooking and cool for 10 minutes 
  6. Brush cooked lamb with dijon mustard 
  7. Coat the entire rack of lamb with the crust 
  8. Place rack of lamb into the airfryer with bone side down, with the crisper plate, and bake at 260°F for 5 minutes 
  9. Remove and rest for 10 minutes 

Roasted Carrots 

  1. Place carrots into a small oven safe dish with butter, herbs, and salt 
  2. Place small oven safe dish into the air fryer with crisper plate 
  3. Air fry at 300°F for 10 minutes, flipping halfway through for even cooking and coating with honey 
  4. Remove oven safe dish with carrots and remove carrots for plating. 

Fondant Potatoes 

  1. Peel potatoes and trim the potato so that the top circumference matches the bottom. Use a peeler to smooth out the edges 
  2. Boil water with salt on a low simmer. 
  3. Place potatoes into the water just enough to cover the potatoes. The water should barely simmer. 
  4. Cook potatoes until fully soft, carefully remove and place aside. 
  5. Place the potatoes into the air fryer basket without the crisper plate and air fry at 400°F for 10 minutes, flipping halfway through for even cooking. 
  6. Remove fondant potatoes 

Lamb Sauce 

  1. Simmer all ingredients except butter into a sauce pan 
  2. Reduce the liquid until dark and coats the back of spoon all the way through 
  3. Strain the liquid and on a low heat pour the liquid back into the saucepan with butter 
  4. Whisk in the butter until there a slight shine to the sauce. 

Plating 

  1. Plate all ingredients as desired and drizzle lamb sauce over the lamb and around the plate for additional. 
  2. Serve immediately 

Chef Notes: Lamb sauce before adding the butter can be made ahead of time
