Talk about perfectly balanced. This salmon and lentil salad blends flavors and textures to check every mealtime box, from flavor to fulfillment. Flaky salmon sits atop a bed of nutritious lentils, crunchy cucumber, and awe-inspiring arugula, topped off with the softest touch of honey to give you wholesomeness on demand.

Canned and packaged legumes often contain higher amounts of sodium. Cooking with dried lentils allows you to set your own sodium levels and achieve your desired texture and flavor. Often,they’re more affordable too! If you can’t find dried lentils, you can rinse the salt off of canned or packaged ones to reduce the sodium.

Instructions

  1. Place the crisper plate into the air fryer basket.  
  2. Select the Air Fry function, adjust temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Place the salmon fillet onto the preheated crisper plate. Spray with olive oil spray, then season with a sprinkle of salt, pepper, garlic powder, and smoked paprika. Drizzle with honey.  
  4. Select the Air Fry function, adjust temperature to 400°F and time to 6 minutes, then tap Start/Pause.  
  5. Remove salmon when golden brown and fully cooked, then set aside to rest.  
  6. Whisk together the lemon juice and olive oil in a medium bowl. Add the arugula, lentils, tomatoes, cucumber, shallot, parsley, and mint and toss to combine. Season to taste with salt and pepper.  
  7. Serve salmon with lentil salad.
