How to Pick Kimchi

Any ripe kimchi will do just fine. Kimchi with shrimp listed in its ingredients is ideal for this recipe, giving the dish a burst of umami.

Chef Tips for Beginners: 

  • The thinner you slice the leeks, the better it cooks in the little parcels. Make sure your knife is sharp and your fingertips are curled inwards.  
  • The reason why we didn’t preheat the air fryer is because we want a gentle increase in heat to essentially steam the fish. Fish tends to overcook, so this helps it become tender and still remain moist.  
  • Kimchi can be intimidating when it comes to spice levels. You can also use baek kimchi (white kimchi), which is made without hot pepper flakes.

Instructions

PREPARING THE COD: 

  1. Season the fish lightly with salt and pepper.
  2. Divide the butter, kimchi juice, and gochujang in a small bowl until well combined.
  3. Fold each parchment round in half. Place a fish fillet onto one half of the round, then spoon a heaping tablespoon of the kimchi butter, 2 tablespoons of leeks, and ½ tablespoon of kimchi.
  4. Close the pouch by folding the flap on top of the fish. Crimp shut by folding the bottom edge upwards, holding it down with one hand and repeating the motion until the parcel is shut.

BAKING THE COD: 

  1. Place the crisper plate into the air fryer basket, then place the fish parcels onto the crisper plate.
  2. Select the Bake function, adjust temperature to 300°F and time to 23 minutes, then tap Start/Pause.
  3. Remove when done.

ASSEMBLE: 

  1. Place a fillet onto a bed of farro and pour the melted kimchi butter from the parcel on top. Garnish with green onions, then serve.

Quick Tip: You can add leftover kimchi butter to hot pasta with parmesan cheese to make a delicious side for other proteins.
