How to Pick Chicken Thighs

Check the butcher counter or refrigerated shelves for packs of "bone-in, skin-on" chicken thighs. Choose thighs with intact, pale-yellowish skin, as excessive skin increases the price due to weight-based pricing.

You can swap with boneless skinless chicken thighs, but just note that they will cook faster

Instructions

  1. Use the measuring cup to add 2 cups jasmine rice to a fine mesh sieve. 
  2. Wash and drain rice with a fine mesh sieve until water runs clear and set aside. 
  3. Set Mode to Sauté, adjust time to 2 minutes, and tap Start
  4. Add oil, ginger and garlic into the inner pot of the rice cooker. 
  5. Sauté the mixture for 1 minute and add the jasmine rice into the inner pot of the rice cooker. 
  6. Place the scallion and chicken thigh on top of the rice. 
  7. Add salt and optionally chicken bouillon into the inner pot of the rice cooker. 
  8. Fill the inner pot of the rice cooker with chicken broth until it reaches the 2-cup Long Grain fill line. 
  9. Select the White Rice function, set to Long Grain, adjust texture to hard, and tap Start
  10. Remove when done, season to taste, and serve while hot. 

Chef Notes: Adding the chicken bouillon is optional, but will add even more flavor
