How To Pick Lemons

Pick ripe lemons by looking for fully bright yellow, firm, and heavy fruit, which indicates high juice content and ripeness. Choose lemons with smooth, thin skin for the most juice, rather than thick, bumpy skin.

Instructions

  1. Peel the lemons with a peeler, making sure not to peel too much of the bitter white part. 
  2. Place the lemon peels evenly between food dehydrator trays, ensuring they don’t overlap. 
  3. Set temperature to 125°F and time to 3 hours, then tap Start/Stop
  4. Remove the lemon peels when done and completely dried, then allow to cool to room temperature.  
  5. Place the lemon peels, black peppercorns, and sea salt in a blender or food processor. Blend until smooth and to your desired consistency.  
  6. Store in an airtight container. 

Chef Notes: Lemon zest is fully dehydrated when it’s completely crisp, brittle, and snaps easily rather than bending. Feel free to adjust the ratio of pepper and salt to lemon zest to your desired preference. You can also leave the salt out to make it a salt-free seasoning.
