How to Pick Chicken Broth

Lowsodium chicken broth is the best choice for this recipe. If you cannot find lowsodium chicken broth, use regular chicken broth and omit any additional salt for the dish. 

Ingredient Swaps

If you’re not a fan of turkey sausage, you can use pork or beef. Make it vegetarian/vegan by using tofu and vegetable stock.

Instructions

  1. Select the Saute function and adjust the temperature setting to high and time to 20 minutes, then press Start.  
  2. Add extra-virgin olive oil and smoked turkey sausage to the preheated inner pot. Sauté for 10 minutes, then remove from pot. 
  3. Add in the garlic, carrots, kale, thyme, and Cajun seasoning. Cook for 15 minutes, then remove. You can place it in the same bowl as the sausage. 
  4. Pour in chicken broth, soaked beans, onion, water, and bay leaf into the pot. 
  5. Select the Pressure Cook function, adjust pressure to high and time to 15 minutes, then press Start
  6. Release pressure quickly by sliding the steam release switch to Vent. 
  7. Remove the bay leaf, then ladle about 2 cups of beans along with 1 to 2 cups of broth into a blender. 
  8. Blend on high until smooth, then pour back into the pot. 
  9. Add in the sautéed ingredients and stir well, then season with salt and pepper.  
  10. Ladle a portion into a bowl and garnish with parsley and a drizzle of extra-virgin olive oil. Serve hot. 

Chef Notes: You can freeze leftover soup for up to a month! Thaw in the refrigerator and heat up until the internal temperature reaches 165°F.
