To Satisfy Crunch Savings

Boasting bold, tangy flavor in every crunch, this high-protein tostada is a nutrient-dense reimagining of a fast-food classic. With savory ground turkey drizzled with a creamy nacho cheese sauce wrapped in a perfectly golden tortilla shell, you’ll be the envy of all your meal prep friends.

How to Pick Tortillas

The bigger the tortilla is, the easier it is to seal and keep the filling inside the wrap.

Ingredient Swaps

You can use low fat cottage cheese if you prefer something lighter.

Nutritional Information

Fermented dairy products deserve more credit! Did you know fermented dairy products such as Greek yogurt and cottage cheese (when made with live cultures) contain probiotics? When consumed in sufficient amounts, research suggests that probiotics may provide benefits for gut health and play a pivotal role in regulating the immune system.

Instructions

COOK THE FILLING:

  1. Remove the crisper plate from the air fryer basket.
  2. Select the Preheat function and adjust temperature to 450°F, then tap Start/Pause
  3. Coat the preheated basket with oil spray and add in the seasoned ground turkey. Use a spatula to flatten it out.
  4. Select the Air Fry function, adjust temperature to 425°F and time to 12 minutes, then tap Start/Pause.
  5. Stir and break up the ground turkey halfway through cooking.
  6. Remove when done and set aside.

MAKE THE NACHO CHEESE:

  1. Blend all of the ingredients for the nacho cheese in a blender or food processor until smooth.
  2. Pour the mixture into a heat proof bowl and microwave in increments of 1 minute for 2 minutes, stirring after each time until smooth.

ASSEMBLE:

  1. Heat a skillet on medium heat over the stove.
  2. Assemble in the tortillas by placing ¼ of the ground turkey mixture on the bottom, nacho cheese sauce, baked tostada shell, 2 tablespoons Greek yogurt, chopped tomatoes and lettuce.
  3. Fold the left side towards the center and while keeping your left hand on the fold, use your right hand to fold the bottom towards the center. Turn the wrap and continue. Every fold should slightly overlap the last and cover the center.
  4. Spray the pan lightly with oil spray, then place the wrap seam side down. Gently apply pressure with a spatula so that the seams make full contact with the pan. Let brown for 1 to 2 minutes.
  5. Coat top lightly with oil spray and flip. Let brown for 1 to 2 minutes.
  6. Remove from pan and serve immediately.
