Using a dehydrator, fresh tomatoes are slowly dried to intensify their natural sweetness and create that signature chewy, slightly tangy texture. Once you try making them from scratch, you’ll never go back to store-bought.

How To Pick Tomatoes

To pick the best Roma tomatoes for dehydrating, select firm, deep red, and fully ripe paste-type tomatoes, as they have low moisture and dense flesh. Choose smaller Romas without blemishes to ensure faster drying, consistent texture, and better concentrated flavor. Avoid overly soft, bruised, or large, watery tomatoes.

You can omit the herbs if you prefer.

Instructions

  1. Clean and dry the tomatoes. Slice smaller tomatoes in half and slice larger tomatoes into ¼-inch thick slices. Regardless of what kind of tomato you use, make sure they are uniformly sized so they dehydrate at the same rate.  
  2. Place the tomatoes onto food dehydrator trays, ensuring they don’t overlap.  
  3. Sprinkle the tomatoes very lightly with salt. 
  4. Select the Fruit function at 145°F for 6 hours, then tap Start/Pause. 
  5. Remove tomatoes when they are dried, but still pliable. You don’t want them to be too dry or brittle. If using smaller sized tomatoes, check on them at the 4- or 5-hour mark. 
  6. Layer the tomatoes in a jar with fresh herb leaves and fill the jar with extra-virgin olive oil.  
  7. Store in the refrigerator for 1 month or in the freezer for longer. Serve on toasted bread, crostini, pasta, sandwiches, salads, and more. Drizzle the infused extra-virgin olive oil for extra flavor.
