Instructions

  1. Place the crisper plate into the air fryer basket. 
  2. Toss the sourdough with 1 ½ tablespoons olive oil, then spread onto the crisper plate. 
  3. Select the Bake function, adjust the temperature to 350°F and time to 7 minutes, then tap Start/Pause
  4. Remove sourdough when lightly golden brown and toasted. 
  5. Heat a large pan over medium-high heat. Add the remaining olive oil, then add the leeks, salt, and pepper. Sautee for 5 minutes or until, softened.  
  6. Add the garlic and cook for 1 minute. Add the spinach, cherry tomatoes, parsley, and basil, then cook for another 3 minutes, or until vegetables have softened, then remove pan from heat. 
  7. Place the eggs, cottage cheese, Parmesan, and milk in a medium bowl. Pulse using an immersion blender until the mixture is smooth and no lumps from the cottage cheese remain. 
  8. Grease an 8-inch baking pan. Spread the cooked vegetable mixture across the bottom, then top with the toasted sourdough. Pour in the egg mixture, then top with shredded mozzarella. Allow the mixture to sit at room temperature for 15 minutes to allow the bread cubes to soak the wet ingredients. 
  9. Cover the pan tightly with foil, then transfer baking pan onto the crisper plate. 
  10. Select the Bake function, adjust the temperature to 350°F and time to 35 minutes, then tap Start/Pause.  
  11. Remove the foil when 15 minutes of cooking remains. 
  12. Remove strata when the top is golden brown and the filling is set. Allow strata to cool for 5 minutes before serving.
