Bid adieu to impatient kiddos, because these easy lasagna roll-ups can be made in the air fryer and don’t need to be baked for hours. This clever twist on tradition is hearty, seasoned to perfection, and full of that cheesy goodness we love.

How to Pick Lasagna

There are two types of lasagna pasta noodles: Ready-to-bake and dried. For this recipe, you’ll need dried pasta noodles that have been boiled so that they are capable of being rolled up.

You can substitute the turkey for Italian-seasoned pork or even plant-based Italian sausages.

These lasagna roll-ups offer a well-rounded mix of nutrients—protein from the turkey and dairy, healthy fats from olive oil and cheese, and carbohydrates from the lasagna noodles. For additional digestive support and blood sugar balancing, add fiber with a side salad or some cooked veggies.

Instructions

COOK THE TURKEY FILLING: 

  1. Remove the crisper plate from the air fryer basket. 
  2. Select the Preheat function and adjust temperature to 450°F, then tap Start/Pause
  3. Coat the preheated basket with oil spray and add in the seasoned ground turkey. Use a spatula to flatten it out. 
  4. Select the Air Fry function, adjust temperature to 425°F and time to 15 minutes, then tap Start/Pause.  
  5. Stir and break up the ground turkey halfway through cooking, then mix in half of the pasta sauce. Return the basket to the air fryer.
  6. Remove when done, then pour the ground turkey into a bowl. Clean and dry the air fryer basket.

ASSEMBLE: 

  1. Boil the lasagna noodles in a large pot of water with kosher salt until al dente. Drain, then toss the noodles with olive oil. 
  2. Mix the ricotta cheese, egg yolk, 1 tablespoon of grated Parmesan cheese, Italian seasoning, garlic powder, and black pepper into a bowl.
  3. Coat the square pan lightly with oil.
  4. Lay a lasagna sheet on a flat surface, then spread a heaping tablespoon of the ricotta mixture onto ⅔ of the pasta. Top with about 1 to 2 tablespoons of the ground turkey filling.
  5. Roll from the filled end to the plain end. Place seam side down into the square pan. Repeat with the rest of the pasta sheets.
  6. Cover the rolled pasta with leftover ground turkey filling and remaining ricotta mixture. Sprinkle the mozzarella and the remaining grated parmesan on top.

BAKE IT: 

  1. Place the square pan directly into the basket. 
  2. Select the Bake function and adjust temperature to 340°F, and time to 12 minutes, then tap Start/Pause
  3. Remove when done and let stand for 5 to 10 minutes. Garnish with basil, then serve.

Chef Notes: You can build this dish ahead of time and cook it the next day. Take the rolled pasta out 15 minutes before you intend on cooking them to slightly bring the dish to temp. This will make sure the dish is cooked properly.
