How to Pick Canned Pumpkin and Pumpkin Pie Spice

A good can of pure pumpkin should have a rich orange hue—nothing pale or dull. Pumpkin pie spice is a blend that's usually made up of 4–5 different ground spices. Look for brands that contain this list of spices: Cinnamon, Nutmeg, Ginger, Allspice, and Cloves.

Instructions

MAKING THE DOUGH

1. Whisk together the warm milk, pumpkin purée, and yeast in a small bowl. Let mixture sit for 5 minutes or until bubbly and activated.
2. Mix the melted butter, egg, sugar, and pumpkin purée mixture in the bowl of a stand mixer until combined. Add the flour, salt, and pumpkin pie spice, then mix on low speed until a shaggy dough forms. Increase the speed to medium and knead until the dough is smooth and elastic, about 5 minutes. The dough will still be slightly sticky, but if it looks too wet, add 1 to 2 more tablespoons of flour.
3. Transfer the dough to an 8-inch bowl and cover the entire bowl tightly up and around with plastic wrap.
4. Remove the crisper plate from the air fryer basket, then place the bowl inside the basket.
5. Select the Proof function, then tap Start/Pause.
6. Remove the dough when doubled in size, then transfer onto a floured surface. Roll the dough to a ½-inch-thick rectangle. Cut out 12 donuts and 12 donut holes using a donut cutter, re-rolling the scraps as necessary. You can also use a 3-inch and 1-inch round cookie cutter.
7. Cover the donuts loosely with plastic wrap or a towel and allow them to rise for 30 to 60 minutes, or until doubled in size

BAKING THE DONUTS

1. Place the crisper plate into the basket.
2. Select the Preheat function, adjust temperature to 350°F, then tap Start/Pause.
3. Place the donuts, reserving donut holes in an even layer, carefully onto the preheated crisper plate. Spray the tops with oil spray.
4. Select the Air Fry function, adjust temperature to 350°F and time to 6 minutes, then tap Start/Pause.
5. Remove donuts when golden brown, then continue the baking process with the remaining donuts and donut holes. When cooking the donut holes, adjust temperature to 350°F and time to 4 minutes.
6. Whisk together all the glaze ingredients in a large bowl until smooth and you have reached a thick glossy consistency.
7. Dip the warm donuts and donut holes into the glaze, then place on a wire rack and let the glaze set for about 5 minutes before serving.

Chef Notes: The time it will take for the donuts to rise the second time will depend on the temperature of your kitchen. If it’s warmer, it could only take 30 minutes and if it’s cooler it may take up to 1 hour. Don’t wait too long to glaze your donuts. You want the donuts to still be warm to get the classic crackly glaze look. However, if they’re too hot, the glaze will slide off. If you don’t have a 1-inch cookie cutter to cut out the donut hole, use the base of a large pastry tip. Be careful not to roll out the dough too thin, or the donuts will be flat once they come out of the air fryer.
