How to Pick Pork Belly

When choosing pork belly at the grocery store, look for a cut with a good balance of fat and meat, uniform thickness throughout, smooth skin with no wrinkles, and a bright pink color. Avoid any pork belly that appears discolored, has uneven thickness, or shows signs of dryness on the skin.

Oven Setting

To make these crispy pork belly in a conventional oven, preheat the oven to 300°F. Place the pork belly in the center of the rack and bake for 2½ to 3 hours. Take the pork belly out, remove the foil, brush off any excess salt, and lightly brush with oil. Preheat the oven at 450°F,then place the pork belly back in the oven to cook for 20 to 30 minutes or until the skin is puffy and golden brown. Alternatively, place the pork belly closest to the heating elements and use the broiler function for 5 to 10 minutes or until the skin is puffy and golden brown.

Instructions

PREPARING PORK BELLY

  1. Combine the kosher salt, five-spice powder, and dark brown sugar in a small bowl and evenly mix. 
  2. Dry the skin and meat of the pork belly as much as possible with paper towels. 
  3. Cut halfway through the pork belly meat vertically 1-inch apart, then horizontally. 
  4. Apply the dry rub liberally on the meat side. 
  5. Wrap the sides and bottom of the meat with foil while leaving the skin exposed. 
  6. Apply a thin layer of vinegar, ensuring all the skin is covered, then cover with coarse salt. 

DRYING AND COOKING PORK BELLY

  1. Place the crisper plate into the air fryer basket. 
  2. Select the Preheat function, adjust temperature to 300°F, then tap Start/Pause
  3. Place the pork belly onto the preheated crisper plate. 
  4. Select the Bake function, adjust the temperature to 260°F and time to 60 minutes, then tap Start/Pause
  5. Remove when the pork belly skin is very dry. If it isn’t dry, extend the cooking time. 
  6. Remove the foil and salt crust on top of the skin. Wipe off any excess salt, then brush a thin layer of oil over the skin. Transfer pork belly back onto the crisper plate. 
  7. Select the Broil function, adjust time to 20 minutes, then tap Start/Pause
  8. Remove pork belly when golden brown and crispy, then cut into pieces and serve hot. 

Drying the skin of the pork belly is important since moisture is the enemy of crispy skin. Coating the skin with coarse salt also helps draw out excess moisture from the skin, which results in a crispier texture.
