Instructions

  1. Whisk together the egg, Greek yogurt, honey, olive oil, orange zest, vanilla extract, and almond extract in a large bowl until well combined. 
  2. Stir together the almond flour, oat flour, baking powder, baking soda, and kosher salt in a small bowl. 
  3. Fold in the dry ingredients to the wet mixture until no dry spots are visible. 
  4. Coat the muffin cups with oil spray and fill slightly under the rim of the cups with batter. 
  5. Place the crisper plate into the air fryer basket.  
  6. Select the Air Fry function, adjust temperature to 400°F and time to 4 minutes, then tap Start/Pause to preheat. 
  7. Place muffin cups onto the preheated crisper plate, leaving ½ inch of space in between. 
  8. Select the Bake function, adjust temperature to 300°F and time to 13 minutes, then tap Start/Pause.  
  9. Remove when done and set aside to fully cool. 
  10. Whisk together all the ingredients for the icing. 
  11. Dip or drizzle each muffin with icing. Let icing set, then serve. 

Chef Notes: Icing can be left off if you are trying to keep this recipe low glucose.
