Instructions

Make the Lemon Herb Sauce 

  1. Stir together all the lemon herb sauce ingredients in a medium bowl until well combined, then set aside. If you prefer a smoother texture, you can blend in a food processor. 

Cook the Steak 

  1. Dry the steak very well with a paper towel, then season both sides with salt and pepper. 
  2. Place the crisper plate into the air fryer basket. 
  3. Select the Air Fry function, adjust temperature to 450°F and time to 4 minutes, then tap Start/Pause to preheat. 
  4. Place the steak into the preheated crisper plate. 
  5. Select the Air Fry function, adjust temperature to 450°F and time to 8 minutes, then tap Start/Pause
  6. Remove steak when golden brown and cooked to your preference. Set aside to rest for 5 minutes before slicing.  

Assemble the Bowls 

  1. Place the leafy greens in a large bowl. Drizzle with olive oil and season with salt and pepper. Add the white beans, farro, tomatoes, cucumber, shallot, and half of the lemon herb sauce. Toss to combine, then season to taste with salt and pepper.  
  2. Divide mixture into 4 portions, then top each portion with sliced steak. Spoon more lemon herb sauce over the steak, then serve.
