Need a one pot meal for an easy dinner? Rice, Chinese sausage, mushrooms, and cured pork belly comes together with deliciously plump rice. Packed with umami with some steamed vegetables, it creates a great balance for lunch or dinner.

How to Pick Chinese Sausage and Cured Pork Belly

Both meats can be found in either the refrigeration or freezer section of your local Asian grocery store.

You can keep this vegetarian by adding firm tofu, tender greens or even frozen chopped vegetables.

Instructions

  1. Add the ingredients for the sauce into the small sauce pot and heat on medium heat. Simmer for 10 minutes or until slightly thickened. Strain and set aside. 
  2. Mix 1 tablespoon of the sauce into the mushrooms. 
  3. Rinse rice until water runs clear then place it into the cooking pot of the rice cooker. 
  4. Fill the pot with water, reserved mushroom soaking liquid, and avocado oil.  
  5. Slice mushrooms, pork belly, Chinese sausage, and green onions into 1/4-inch-thick slices and set aside. 
  6. Select the White Rice function, set to short Grain, then tap Start.  
  7. Open the rice cooker during the last 25 minutes and use a chopstick to poke holes into the rice making sure you touch the bottom of the pot every time.  
  8. Add in the mushrooms, Chinese sausage, pork belly and bok choy on top of the rice then close the lid. 
  9. Remove the bok choy when done. 
  10. Season the rice with 3-4 tablespoons of the sauce or until seasoned to taste then use the rice paddle to mix well. 
  11. Garnish rice with green onions and serve with bok choy.
