Romesco Sauce

Instructions

  1. Drain the tuna well and place into a medium bowl. 
  2. Add in mashed potatoes, dill, mayonnaise, green onions, parsley, mustard, lemon zest, ½ teaspoon salt, pepper, and egg. Mix well until combined. 
  3. Spoon 3 tablespoons into palm of hands and shape into 2.5-inch croquette logs. 
  4. Roll the logs in the panko breadcrumbs, pack on the breadcrumbs, and then place onto a plate. 
  5. Freeze for 30 minutes. 
  6. Place the crisper plate into the air fryer basket.  
  7. Select the Air Fry function, adjust temperature to 450°F and time to 6 minutes, then tap Start/Pause to preheat. 
  8. Add tomatoes and bell peppers onto the preheated crisper plate in basket. 
  9. Select the Air Fry function, adjust temperature to 450°F and time to 8 minutes, then tap Start/Pause.  
  10. Flip tomatoes and bell peppers halfway through cooking. 
  11. Remove when done and set aside. 
  12. Wipe the basket dry with paper towels. 
  13. Place croquettes on the crisper plate. 
  14. Coat croquettes with oil spray. 
  15. Select the Air Fry function, adjust temperature to 375°F and time to 10 minutes, then tap Start/Pause.  
  16. Flip the croquettes halfway through cooking. 
  17. Peel the skin off of the bell peppers and tomatoes, then place into the cup of the immersion blender. 
  18. Add garlic, almonds, parsley, extra-virgin olive oil, lemon juice, and ¾ teaspoon salt. 
  19. Pulse until smooth and pour into a bowl. 
  20. Serve tuna croquette with romesco. 

Chef Notes: You can serve the romesco sauce hot or cold.
