You want sweet potatoes that are firm with smooth skin. Wrinkly sweet potatoes that are soft indicate that it’s rotten on the inside.

Instructions

PREPPING THE SWEET POTATO ROLLS

1. Pierce the outside of the sweet potatoes all over with a fork. Wrap sweet potatoes entirely with aluminum foil.
2. Place the crisper plate into the air fryer basket.
3. Select the Preheat function, adjust temperature to 410°F, then tap Start/Pause.
4. Place the sweet potatoes onto the preheated crisper plate.
5. Select the Roast function, adjust temperature to 410°F and time to 50 minutes, then tap Start/Pause.
6. Remove the sweet potatoes when done and set aside until cool enough to handle.
7. Peel the skin off and mash the sweet potatoes with a fork until smooth, then stir in the maple syrup.
8. Combine the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
9. Add half of the sweet potatoes into the dry ingredients and mix. Repeat with the other half.
10. Knead and shape the dough into a ball, then cover with plastic wrap and let sit for 30 minutes.
11. Roll the dough out into a 10 x 16-inch rectangle.
12. Mix all the ingredients for the filling in a small bowl until well combined.
13. Spread the filling all the way across the dough but leave an inch uncovered on the top and bottom edge.
14. Roll the dough downwards starting from the top. Pinch the seams shut once you get to the end.
15. Slice the dough roll in half using either a thread or a sharp knife. Slice each half into half. You should have 4 portions. Slice each of the 4 portions in half, making 8 rolls.

BAKING THE SWEET POTATO ROLLS

1. Coat the cake pan lightly with oil spray, then place the rolls inside.
2. Select the Preheat function, adjust temperature to 400°F, then tap Start/Pause.
3. Place the cake pan onto the preheated crisper plate.
4. Select the Bake function, adjust temperature to 350°F and time to 25 minutes, then tap Start/Pause.
5. Remove when done and set aside to cool.
6. Whisk together the ingredients for the icing and drizzle onto the cinnamon rolls, then serve.

Chef Notes: If you plan on making these ahead of time for a party, you can keep the glaze separate and top it off before you leave the house.
