These roasted vegetables combine a colorful array of zucchini, bell peppers, cherry tomatoes, red onions, and eggplant all tossed in olive oil and a blend of rosemary, thyme, and oregano. The air fryer locks in their natural sweetness while adding a slight char for extra flavor. Ready in a flash, these veggies are a perfect side or entrée.

How to Pick Veggies

When shopping for vegetables, two key factors are firmness and color. Choose veggies that are as firm or crisp as possible and have consistent coloring. Unlike fruit, smell isn't as telling of a vegetable's freshness, although anything that smells overly sweet or sour is likely past its prime.

Other vegetables that would be great to swap into the recipe are cauliflower, asparagus, and summer squash.

Instructions

Mediterranean Roasted Vegetables

  1. Place the crisper plate into the COSORI Air Fryer basket. 
  2. Select the Preheat function, adjust temperature to 425°F, then tap Start/Pause. 
  3. Combine the zucchini, eggplant, bell pepper, onion, cherry tomatoes, olive oil, garlic, oregano, smoked paprika, salt, pepper, and red pepper flakes in a large bowl and toss to coat. 
  4. Place the vegetables onto the preheated crisper plate. 
  5. Select the Roast function, adjust time to 15 minutes, then tap Start/Pause. 
  6. Stir the vegetables halfway through cooking. 
  7. Remove when golden brown and tender. Garnish with fresh basil, then serve. 

Chef Notes: These Mediterranean Roasted Vegetables are a perfect side dish to pair with a simple protein such as chicken or salmon, or add them on top of quinoa or pasta to keep it vegetarian.
