How To Pick Ground Lamb

Ground lamb is often sold in vacuum packages. If your store carries it in the frozen section, make sure to thaw it in the refrigerator overnight before you use it.

Instructions

Make the Tzatziki Sauce 

  1. Grate 1 cucumber on the larger grate side into a bowl. Season with ¼ teaspoon salt and set aside. 
  2. Squeeze out as much liquid out of the cumber with your hands and add into a clean bowl. 
  3. Add garlic, labneh, extra-virgin olive oil, lemon juice, dill, and pepper. Mix well and refrigerate while you make the rest of the recipe.  

Prepare the Gyro 

  1. Season the ground lamb with onion powder, garlic powder, dried oregano, cumin, dried rosemary, dried thyme, dried mint, 1 teaspoon salt, and 1 teaspoon pepper. Mix well. 
  2. Cover mixture with plastic wrap and refrigerate for a minimum of 30 minutes. 
  3. Divide lamb mixture into 4 portions. 
  4. Cut 8 pieces of 7 ½ x 12 ¼-inch parchment paper. 
  5. Place a portion onto parchment paper and place another sheet on top. 
  6. Roll out the ground mixture until almost paper-thin. Roll from the shorter end and set aside. Repeat with the rest. 
  7. Place the crisper plate into the air fryer basket. 
  8. Select the Air Fryer function, adjust temperature to 450°F and time to 8 minutes, then tap Start/Pause to preheat. 
  9. Place rolls into preheated basket. 
  10. Select the Air Fry function, adjust temperature to 375°F and time to 22 minutes, then tap Start/Pause.  
  11. Remove when done and let cool for 5 minutes.  

Assemble 

  1. Unravel and rip the meat into large pieces. Optionally, place torn pieces of lamb into the air fryer and select the Air Fry function, adjust temperature to 450°F and time to 4 minutes, then press Start/Pause. This will provide crispy pieces. 
  2. Assemble by spreading 1 to 2 tablespoons of tzatziki, lamb, cucumbers, tomatoes, red onion, and feta onto pita bread, then serve.  

Chef Notes:Air fry the shredded meat at 450°F for 5 minutes if you prefer it to have crispy pieces.
