As the holidays wind down, this Green Enchilada Leftover Turkey Soup keeps on giving. As fresh and nourishing as it is festive, all it takes is a quick simmer to deepen its flavor for a slow-cooked taste that will have everyone asking for another ladle full.

You can use either dark or white meat from the leftover thanksgiving turkey.

Ingredient Swaps

If you don’t have leftover turkey, you can absolutely use leftover rotisserie chicken.Omit the queso fresco or swap it with your favorite dairy-free cheese to keep this dish dairy-free.

Instructions

  1. Select the Saute function, adjust temperature setting to high and time to 5 minutes, then press Start.  
  2. Add garlic, white onion, extra-virgin olive oil, and oregano into the preheated inner pot. Cook for 5 minutes. 
  3. Add in the enchilada sauce, broth, turkey carcass, and salsa verde into the pot. 
  4. Place the lid onto the pressure cooker and secure it. 
  5. Select the Pressure Cook function, disable Keep Warm, adjust pressure to high and time to 10 minutes, then press Start.   
  6. Release pressure quickly by sliding the steam release switch to Vent.  
  7. Remove all the bones from the pressure cooker. 
  8. Add in the shredded turkey meat and drained beans. Stir well. Let stand for 5 minutes to let the turkey meat heat thoroughly. 
  9. Serve soup with desired toppings. 

Chef Notes: Leftovers and freeze up to a month in the freezer. Thaw in the fridge overnight and reheat.
