Sweet potatoes don’t always have to lean sweet. This savory mash shows off their earthy side. Roasting the potatoes in the air fryer first caramelizes the edges and concentrates their natural flavor, making the final mash rich, smoky, and full of depth. Infused with garlic, herbs, and a touch of butter, it’s a side dish that feels both comforting and elevated. Perfect alongside roasted meats, hearty vegetarian mains, or as a wholesome alternative to classic mashed potatoes.

Ingredient Swaps

Swap the milk with non-dairy milk, swap the butter with olive oil, and omit the Parmesan to keep this dish dairy-free.

Instructions

Roast the Sweet Potatoes 

  1. Place the crisper plate into the air fryer basket, then line with foil or parchment paper. 
  2. Coat the sweet potatoes with olive oil, then place into the basket. 
  3. Select the Bake function, adjust temperature to 360°F and time to 45 minutes, then tap Start/Pause
  4. Flip sweet potatoes over halfway through cooking.  
  5. Remove sweet potatoes when very tender. The total time will depend on the thickness and size of your sweet potatoes. 

Make the Sweet Potato Mash 

  1. Heat the milk, garlic, 2 sprigs of thyme, and butter in a saucepan. Let it come to a simmer, then remove from heat. 
  2. Spoon out the flesh of the sweet potatoes and place into a bowl. Mash until smooth. 
  3. Pour the milk mixture through a strainer and into the mash. Add a little bit at a time until desired consistency. Add Parmesan cheese, if desired. 
  4. Season with salt and pepper to taste, garnish with chopped thyme, then serve.
