How To Pick Heirloom Tomatoes

Avoid overly ripened heirloom tomatoes. They can cause the galette to get soggy.

Ingredient Swaps

You can swap out half of the tomatoes with zucchini and yellow squash to make this a vegetable galette.

Instructions

Making Galette Dough 

  1. Place all-purpose flour, salt, pepper, and sugar into the food processor. Pulse for 5 seconds to mix the ingredients. 
  2. Add cubed butter and cold vodka into the dry ingredients. 
  3. Pulse until mixture resembles cornmeal. 
  4. Transfer mixture onto the table and split into two portions. Shape and flatten into discs. 
  5. Wrap the discs with plastic wrap and refrigerate for at least 1 hour. 
  6. Let pastry dough sit at room temperature for 10 minutes before rolling out to an 8-inch circle that is ¼-inch thick.  

Filling the Galette 

  1. Slice tomatoes ½-inch thick and place onto a baking rack and season with a pinch of salt. Set aside for 10 minutes. Then pat tops dry with paper towel. 
  2. Stir together ricotta, Parmesan, basil, thyme, parsley, and garlic until well combined. 
  3. Reserve 4 tablespoons of the filling and set aside. 
  4. Spread 2 tablespoons of the reserved filling, leaving 1 inch from the edge uncovered. 
  5. Layer on top the tomatoes, just slightly overlapping each other. 
  6. Fold the edges toward the center and pleat your way around the whole galette. 
  7. Whisk together egg yolk and heavy cream. Brush the egg wash on the crimped edges. 

Baking 

  1. Insert crisper plate into the air fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 450°F and time to 8 minutes, then tap Start/Pause to preheat.  
  3. Pick up galettes by holding the edges of the parchment paper and placing them onto the preheated crisper plate. 
  4. Select the Bake function, adjust the temperature to 375°F and time to 17 minutes, then tap Start/Pause.  
  5. Remove when done, dab any wet spots on the surface with a paper towel. 
  6. Fill remaining filling into a piping bag and pipe little dollops onto the galette. 
  7. Garnish with flaky sea salt and serve. 

Chef Notes: Strain ricotta overnight in the fridge by lining mesh strainer with a paper towel and adding the ricotta on top. This will help keep the galette from releasing too much liquid.
