Instructions

Make the streusel: 

  1. Combine all the streusel ingredients in a medium bowl. Mix well until crumbly. 

Make the batter: 

  1. Place the egg, vanilla extract, Greek yogurt, olive oil, almond milk, maple syrup, brown sugar, salt and cinnamon in a large mixing bowl. Whisk until combined. 
  2. Add the baking powder, quinoa, and flour and stir with a spatula to combine. Fold in the blueberries. 
  3. Grease the muffin cups, then divide the batter between the muffin cups. Top each muffin with streusel. 

Bake: 

  1. Insert the crisper plate into the COSORI Air Fryer basket. 
  2. Select the Air Fry function, adjust the temperature to 280℉ and time to 4 minutes, then tap Start/Pause to preheat. 
  3. Place muffins onto the preheated crisper plate. You will need to work in batches. 
  4. Select the Bake function, adjust the temperature to 280F and time to 18 minutes, then tap Start/Pause.  
  5. Remove muffins when a toothpick inserted into the center comes out clean. 
  6. Transfer muffins to a wire rack to cool for 10 minutes, then serve.
