Instructions

Prepare Cauliflower

  1. Boil 4 cups of water and 1 teaspoon of salt in a large stock pot. 
  2. Add cauliflower florets and cook until tender, about 10 minutes. 
  3. Drain the cooked cauliflower, then place back into the pot and let sit with the heat off. This will let any remaining liquid evaporate. 

Make the Cheese Sauce

  1. Add the grated cheddar cheese, vegetable broth, cottage cheese, milk, butter, all-purpose flour, ½ teaspoon salt, black pepper, and nutmeg into the blender. Pulse until smooth.

Assemble &Bake

  1. Pour the cheese mixture into the pot with cauliflower and stir to coat.  
  2. Coat the square pan lightly with oil spray, then add in the cauliflower mixture. 
  3. Combine all the ingredients for the toppings in a bowl and mix. 
  4. Sprinkle cornflake mixture on top and smooth it out in an even layer.  
  5. Cover the baking pan with aluminum foil. 
  6. Place the crisper plate into the air fryer basket, then carefully place the baking pan onto the crisper plate. 
  7. Select the Bake function, adjust temperature to 375°F and time to 25 minutes, then press Start/Pause
  8. Remove the basket after 20 minutes of cooking time has passed. Remove the foil, spray the top with oil spray, then cook for the remaining 5 minutes. 
  9. Remove when done and let sit for 10 minutes before serving. 

Chef Notes: You can assemble this dish ahead of time and bake it the next day. Just let it sit for 10 to 15 minutes at room temperaturebefore air frying.
