Instructions

MAKING THE DOUGH

1. Combine the oat flour, coconut sugar, and kosher salt in a medium bowl.
2. Stir in the coconut oil and cold water until a dough forms. If you need more water, you can add one teaspoon at a time.
3. Coat the square pan lightly with oil spray and place the parchment paper sheets into the pan, intersecting in the middle.
4. Add the dough into the pan and press down firmly to even it out. Make sure to pack the corners and edges tightly.
5. Place the crisper plate into the air fryer basket.

BAKING THE PUMPKIN BARS

1. Select the Preheat function, adjust temperature to 375°F, then tap Start/Pause.
2. Place the square pan onto the preheated crisper plate.
3. Select the Bake function, adjust temperature to 325°F and time to 15 minutes, then tap Start/Pause.
4. Remove when done and set aside to cool while you prepare the filling.
5. Add the ingredients for the filling into the blender and blend on high until smooth.
6. Pour the filling onto the cooled crust.
7. Select the Preheat function, adjust temperature to 300°F, then tap Start/Pause.
8. Place the pan onto the preheated crisper plate.
9. Select the Bake function, adjust temperature to 300°F and time to 42 minutes, then tap Start/Pause.
10. Remove when done and let cool to room temperature, then let set in the refrigerator for at least 2 hours.
11. Slice evenly into 9 bars and serve with light whipped topping or an extra dusting of pumpkin pie seasoning.

Chef Notes: Cover in plastic and let set overnight to ensure that the filling has fully set
