How to Pick Poblano Peppers

The bigger the pepper, the more space there will be to stuff the chili in. Avoid the flat poblanos.

You can use plant-based grounds for this recipe instead of turkey. Dairy-free cheddar can be used as well.

Instructions

MAKE THE CHILI: 

  1. Heat the skillet over medium heat and add the extra-virgin olive oil, then add the garlic, yellow onion, and bell pepper. Cook for about 5 minutes or until the onions become translucent.
  2. Add the ground turkey into the skillet, breaking up the meat into small grounds.
  3. Season with chili powder, cumin, and paprika, then cook for about 10 to 15 minutes.
  4. Pour in the diced tomatoes and cook for about 5 minutes. Stir in the black beans and season with salt and pepper to taste. Remove from heat and set aside.

PREP THE PEPPERS: 

  1. Wash and dry the poblanos, then slice in half lengthwise. Remove any pith or seeds from the pepper.
  2. Spoon ⅓ cup of the chili into the peppers.

BAKE THE STUFFED PEPPERS: 

  1. Place the crisper plate into the air fryer basket.
  2. Select the Preheat function at 400°F for 4 minutes, then tap Start/Pause.
  3. Place 4 halves onto the crisper plate.
  4. Select the Bake function, adjust temperature to 375°F and time to 16 minutes, then tap Start/Pause.
  5. Remove basket during the last 3 minutes and top peppers with cheddar. Return basket to the air fryer.
  6. Remove when done and transfer to a serving plate. Repeat the cooking process with the remaining peppers. Serve warm with Greek yogurt and cilantro, if desired.

Quick tip: If the chili becomes too dry, you can add a little vegetable stock to prevent it from drying out too much.
