Instructions

Make the Cupcakes 

  1. Whisk together the egg, pumpkin puree, oil, sugar, and vanilla extract in a medium bowl. 
  2. Whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt in a separate bowl. 
  3. Add the dry ingredients into the wet ingredients and whisk until combined. 
  4. Fill each baking cup ¾ full (about ¼ cup) with the batter.  
  5. Place the crisper plate into the air fryer basket. 
  6. Select the Preheat function, adjust temperature to 300°F, then tap Start/Pause
  7. Place cupcakes onto the preheated crisper plate. 
  8. Select the Bake function, adjust temperature to 300°F and time to 15 minutes, then tap Start/Pause
  9. Remove the cupcakes when a cake tester comes out clean when inserted into the center. Transfer cupcakes to a wire rack and let cool completely. 

Make the Cream Cheese Frosting 

  1. Combine the cream cheese, butter, and vanilla extract in the bowl of a stand mixer fitted with the paddle attachment or a large bowl.  
  2. Beat on high speed until light and fluffy, then reduce the speed to low and add the powdered sugar ½ cup at a time, beating until fully combined between additions.   
  3. Transfer the frosting to a pastry bag fitted with a pastry tip, then set aside. 
  4. Pipe the cream cheese frosting on the room-temperature cupcakes.  
  5. Garnish each cupcake with a sprinkle of pumpkin pie spice, then serve.
