How to Pick Chocolate Chips for Cookies

When choosing chocolate chips for cookies, consider things like cocoa content, your taste preference, and the balance of sweet and bitter flavors.  Semisweet chocolate chips with 35-65% cocoa solids create a good balance of sweetness and bitterness. Dark chocolate chips with 60-80% cocoa solids will be more bitter in flavor but can be great when you want to balance out the sweetness of cookie dough. Good chocolate chips melt smoothly and have a nice creamy texture, while bad chocolate chips will be too waxy or chalky. Lastly, look for chocolate chips with minimal additives.

Instructions

PREPARING COOKIE DOUGH

  1. Melt the butter in a medium saucepan over medium heat and stir occasionally until brown specks form, about 5 to 7 minutes. Once it smells slightly nutty and you see the brown specks, remove from heat and place in a large mixing bowl. Cool for 10 minutes.
  2. Add the granulated sugar and brown sugar to the bowl with the cooled butter and whisk until combined. Add the egg and vanilla extract and whisk for 1 minute, or until very smooth and creamy. Switch to a spatula, then add the flour, baking soda, salt, and cinnamon and stir until just combined. Add the oats, coconut, pecans, and chocolate chips and stir until just combined.  
  3. Scoop the cookie dough into 1.5-ounce portioned dough balls for a total of 16 cookies. Flatten the cookies slightly with the palm of your hand. 

BAKING THE COOKIES

  1. Place the crisper plate into the air fryer basket. 
  2. Select the Preheat function, then tap Start/Pause. 
  3. Line the crisper plate with parchment paper, then place 4 cookies onto the preheated crisper plate evenly spaced apart.  
  4. Select the Bake function, adjust temperature to 300°F and time to 11 minutes, then tap Start/Pause. 
  5. Remove the cookies when golden brown, then immediately sprinkle with flakey sea salt on top, if desired. 
  6. Allow the cookies to set for 5 minutes before transferring to a wire rack, then repeat baking process in batches with the remaining cookie dough. Serve cookies after cooling. 

Chef Notes: Top the cookies with extra pieces of pecans and chocolate chips for a beautiful presentation. You can make the cookie dough, portion, and store it in the refrigerator for up to 48 hours or in the freezer. If baking cookies from frozen, add 2 to 3 extra minutes.
