Mozzarella: You can omit the fresh mozzarella balls if you are lactose intolerant. 

How to Pick Chicken

  • Color: Fresh chicken should have a pinkish color. If the flesh is gray or transparent, it's most likely not fresh. Avoid cosmetic damage, such as bruising or tears in the skin, which can affect the chicken's quality. 
  • Texture: Chicken should also be plump. When you press against it, the meat should firm but somewhat springy, resuming its shape after a few seconds. 
  • Odor: Fresh chicken shouldn’t have an odor. If you notice any unpleasant smells, it’s likely the chicken is no longer fresh.

PREPPING THE SKEWERS

  1. Combine the chicken cubes, pesto, salt, and pepper in a large bowl and toss to combine. Cover bowl and refrigerate for 30 minutes. 
  2. Add the cherry tomatoes to the bowl and toss to combine. Thread marinated chicken pieces and cherry tomatoes onto skewers, alternating between each.  
  3. Place the crisper plate into the COSORI Air Fryer basket. 
  4. Select the Preheat function, adjust temperature to 450F, then press Start/Pause. 
  5. Place the skewers onto the preheated crisper plate. 

COOKING THE CHICKEN & TOMATO

  1. Select the Broil function, adjust time to 6 minutes, then press Start/Pause. 
  2. Remove skewers when done, then place a fresh mozzarella ball onto the ends of each skewer. Arrange the skewers onto a serving dish, then drizzle with balsamic glaze and serve. 

Chef Notes: Using store-bought pesto makes this dish come together fast. Feel free to make your own pesto if you prefer.
