Instructions

PREPARE THE BATTER: 

  1. Whisk the milk alternative, mashed ripe banana, egg, maple syrup and vanilla extract in a large bowl.
  2. Stir together oats, walnuts, cinnamon, kosher salt, and nutmeg in another bowl.
  3. Fold the dry ingredients into the wet ingredients until well combined.
  4. Coat each muffin cup lightly with oil spray and fill ¾ full of the batter.

BAKE THE MUFFINS: 

  1. Place the crisper plate into the air fryer basket.
  2. Select the Preheat function, adjust temperature to 350°F, then tap Start/Pause.
  3. Place the muffin cups onto the preheated crisper plate, making sure not to overcrowd the basket. You may need to cook in batches.
  4. Select the Bake function at 20 minutes, adjust temperature to 325°F, then tap Start/Pause.
  5. Remove when done and set aside to cool for 15 to 20 minutes, then serve.

Quick Tip: Keep leftovers refrigerated or frozen. If frozen, let come to room temperature before eating.
