Instructions

Crust 

  1. Mix all the crust ingredients in a medium bowl until combined.  
  2. Line the bottom of a 6-inch pan with parchment paper, then press crust mixture evenly onto the bottom of the pan. Press the crust mixture evenly onto the bottom and 1 inch up the sides of the pan. 
  3. Place the crisper plate into the air fryer basket, then place the pan onto the crisper plate. 
  4. Select the Bake function, adjust temperature to 280°F and time to 10 minutes, then tap Start/Pause.  
  5. Remove crust when golden brown and fragrant.  

Filling 

  1. Place the cottage cheese, Greek yogurt, egg, lemon zest, honey, cornstarch, and vanilla extract in a food processor or blender. Blend on high speed until smooth and creamy. Pour filling into the pan. 
  2. Select the Bake function at 20 minutes, adjust temperature to 280°F, then tap Start/Pause.  
  3. Remove cheesecake when golden brown and the filling is set with a slight jiggle. Allow cheesecake to cool to room temperature, then place in the refrigerator to chill completely.  
  4. Garnish with fresh berries, then serve.
